Did you change the Subnet statement in hosts/donkey on the donkey node itself?
If not, do so. You also need to restart the tincd on donkey after you have done
it.

If it still doesn't work as intended, could you send me a copy of tinc.conf
from elephant and donkey, and the host config file?
